  • Dough
    • 120 g unsalted butter
    • 170 g multi-purpose wheat flour
    • 120 g white or brown sugar
    • 1/2 tbsp baking soda
    • 1 tbsp vanilla extract or another, to taste
    • 1 L egg
    • 1 tbsp salt
  • Topping choice 1
    • chocolate chips
    • almonds
  • Topping choice 2
    • 1/2 tbsp cocoa powder
    • lacasitos or M&M´s

    • 1/2 tbsp cocoa powder
    • white chocolate chips
    • 1/4 tbsp red food colouring

    • 1 tbsp peanut butter
    • dehydrated red berries

Step by step

  1. Put the butter in a bowl at room temperature. Mix and whip with the sugar for 5 minutes at medium speed or by hand with a whisk.

  3. Add the egg and keep whipping until it is well mixed. Then, add the vanilla or other extract to taste.

  5. Mix in the flour and baking soda using a colander. Sift over the dough while patting it with your hand.
    Beat at low speed until you can't see any flour. But only as long as needed, so the cookies don't turn out too hard.

  7. Now is the time to let the dough sit in a bowl covered with film for 1 hour, or even overnight.

  9. Make every cookie using 30 - 35 g of dough and put in the ingredients you like most. Mix well making a ball and then flatten each one onto the baking paper. If the mixture is too sticky putting some mild oil on your hands will help.

  11. Bake for another 10 - 12 minutes at 180º C with heat from above and below without the fan. Leave some space between the cookies, with 5-6 per tray.

  13. Let cool on a rack for around 10 minutes. Serve or store.

CREATE YOUR OWN ASSORTMENT WITH COLOUR

Since cookies end up with same colour, the ones with powdered cocoa have a chocolate colour.

Food colouring gives you the possibility to give the cookies different fantasy colours without giving them flavour, like with topping 3 which is based on the famous red velvet cake.

There is an infinite number of possibilities for creating the assortment you want. You can choose the standard cookie option or create explosive mixtures. We suggest 4 choices, from basic cookies with chocolate and nuts to cookies in colours.

Mixing the dry ingredients is one of the parts that the little ones enjoy most, because they feel like they're a part of the process and they let their imaginations and incipient cooking skills run wild.

TOOLS FOR MAKING AND STORING COOKIES

You'll need a tool for beating in the process. If you don't have one you can use a whisk and do it by hand. You should also use a good bowl for mixing.

Let the cookies cool down on a rack for 10 minutes after taking them out of the oven. Then you can use a long spatula to peel the cookies off of the oven paper and move them. You can keep them in a dry place for one or two weeks. But they' surely won't last that long, because they're delicious.
